No Fuss Garlic Hoisin Ground Chicken Lettuce Wraps


Who doesn't love lettuce wrap? It'll convert any carb-loving skeptic into saying "yes, I am so full from this". I always find it funny that lettuce wraps typically found in the appetizer section of restaurant menus - but why? This can totally be a full meal! 

This lettuce wrap will leave you feeling guilt-free, full and happy! Try it. I promise you it will change your lunch game...or dinner... 

Ingredients:

Chicken "stuffing" - I have no idea what else to call this :)
1/2 Tsp Sesame oil
1 Shallot - minced
2 Garlic cloves -,minced
300g Ground Chicken (options: chicken breasts, shrimp)
1/2 cup Mushrooms
1/4 cup Green pepper - diced
1/2 cup Frozen mixed vegetable (optional. You can use whatever vegetable you like)
1/2 Tbsp Low-sodium soy sauce
1/2 Tsp Rice wine vinegar
1 Red chili pepper - minced
1/2 Tsp Sriracha (optional. I love spicy)
1/2 cup Garlic Hoisin sauce (I used the VH brand)
3 Tbsp water or whatever stock you have on hand (this is to add a bit more sauce to the stuffing)

Head of Iceberg or Boston leaf lettuce as your wrap!


Directions:

  • In a small bowl, combine soy sauce, rice wine vinegar, sriracha, garlic hoisin. Set aside
  • Heat up sesame oil in a large pan or work. Saute the shallot and garlic until tender/translucent
  • Add in ground chicken. Cook until brown
  • Add in mushrooms, green pepper, frozen or fresh vegetables.
  • Pour in sauce mixture. Stir until everything is coated with this sauce
  • If you think you need more sauce, go ahead and add the water or stock. The hoisin sauce thickens it up.
  • Cook for about 5 mins
  • Garnish with scallions and thin slices of radish. 
Rip off a lettuce leaf and stuff that baby up with this yummy chicken mix! and enjoy!
