Fajitas and tacos are real treat around here. It's so much fun to eat with your hands!
Serves 2

Cook time: 15 mins
Ingredients:
For the filling:
1 lb chicken breast, sliced
1 small red bell pepper
1 small white onion
1/2 tbsp ground cumin
1/2 cayenne powder or chili powder
1/2 tsp paprika (optional)
1/2 tsp tumeric (optional)
1 tbsp tomato paste
salt and pepper
The fixin':
Corn tortilla (I used a small one here.. it's really meant for tacos. Don't bother with flour tortillas.. it's not worth it)
Cilantro
Valentina Hot Sauce (a guy from Mexico told us he uses his sauce for his snacks lol)
Sour cream
Salsa
Whatever cheese you want to use
Directions:
- In skillet, saute onions and bell peppers until it caramelizes and you get a nice golden colour on them. Set aside in a bowl.
- In the same skillet, pour some cooking oil and cook the chicken breasts.
- When the chicken is cooked, add back the bell pepper and onions.
- Toss in the ground cumin, tumeric, cayenne pepper, paprika - mix that about until the chicken and veggies are covered
- Salt and pepper to taste
- Add tomato paste until you get a sauce going.
Turn of the heat and assemble your fajita/tacos!
