I have this obsession with orzo lately. I've been cooking with this pasta in almost all of my dishes lately. This is a yummy quick meal for lunch. It's light and fresh. It definitely keeps you full because of the tiny orzo. Sometimes we need something that's a bit more decadent than quinoa :)
Follow the directions on the box on how to cook the orzo. Mine took about 6 minutes.
I added some sweet bell peppers, organic baby carrots, organic tofu, organic kale, fresh thyme, low fat mozzarella, grated pecorino cheese, a bit of olive oil, balsamic vinegar and lemon juice for freshness.
