I had a day off today so I had the luxury to spoil myself with a delicious and healthy breakfast. Packed with all the goodness you need to start your day without skipping out on flavour.
This sure beats my usually morning cereal or fruit smoothie or yogurt and granola breakfast.
Funny enough I randomly had all of these ingredients on hand already. Avocado makes a rare appearance in my kitchen every now and then. When it does I maximize on what I can do with it.
Ingredients:
1 slices of rye bread
1 ripe avocado
1/2 ripe tomato (diced or sliced)
2 fried eggs (I like mine very runny)
Cilantro for garnish
Grated pecorino cheese (I had this cheese on hand already but you can use whatever you want or have)
Sriracha hot sauce
Directions
- Scoop out the avocado into a bowl. Sprinkle in a pinch of garlic powder, kosher salt and pepper into a bowl of your smashed up avocado. Spread the avocado on your toasted rye bread
- Layer on the tomatoes
- Layer on the fried eggs
- Sprinkle cilantro
- Grate fresh pecorino cheese
- Ground some fresh pepper on top for seasoning
- Drizzle Sriracha all over that toast!
Eat and enjoy the rest of the day!
